Tasty Undhiyu

Ingredients

Yam-100gms
Potato (Peeled and diced )-100gms                  
Beans (Peeled and diced ) -100gms
Raw banana (diced) -100gms
Asafoetida -1/2tsp
Oil - 1/2
Cumin -1/2 tsp

Ingredient for Muthiya
Chickpea flour -2cups
Kasoori methi -1tsp
Redchilli -1tsp
Sathri (or) lemon flower -1tsp
Sugar -1tsp
Oil -2tsp
Salt to taste

Ingredient for Masala
Coconut (grated )-1tsp
Coriander powder -3tsp
Cumin Powder -1/2tsp
Fresh coriander (chopped)
Turmeric powder -1/2tsp
Red chili powder -1/2tsp
Salt for taste


Method
  • Lightly fry all the vegetables and keep aside.
  • To prepare muthiya, put all the ingredients in a bowl and mix it well.
  • Make small balls from this mixture and fry till it gets golden brown color.
  • To prepare the masala,  mix all the ingredients keep aside.
  • Heat oil in a pan and add asafoetida and cumin seeds.
  • Now add t masala mixture and cook for few mins.
  • Finally, add all the vegetables and muthiya balls, Cook till done.

Kavuni Arisi Ladoo


  Ingredients
  Black Rice (Kavuni arisi) - 1Cup
  Jaggery - 1/2cup
  Coconut - 1/4 Cup (Grated)
  Cardamom Powder - 1tbsp
  Sugar or Honey - 2tbsp
  Ghee -3/4 Cup
  Almonds (skin peeled and Chopped) - 20
  Cashew nuts (chopped) - 9
  Raisins -20


          Method
  • Wash and soak Black rice for two hours, then drain water, spread over a cotton cloth and leave for an hour
  • Heat a Pan, add black rice and dry roast for 5 minutes on low flame, till you get the nice aroma of rice, finally add 2 tbsp ghee mix it well and leave aside let it cool.
  • Heat a pan, add 2 tbsp of ghee and Roast cashews, raisins and Chopped almonds and keep aside.
  • Heat a pan add 1tbsp of ghee add coconut, roast till its light brown color.
  • Put Roasted Black Rice into a mixer jar and grind to fine powder.
  •  Add jaggery and sugar or honey into the ground black rice mixture.
  • Grind the Dry fruits and nuts into powder, finally add it to the Black rice, at last, add coconut mixture into the black rice mixture roast it in low flame for four minutes.   
  • Add hot ghee and mix well, remove it from a stove and cool it.    
  • Now make laddu out of the mixture and enjoy the taste with your family.

Dry Fruits Laddu

Ingredients

Almonds ( chopped)-1/2 Cup
Walnuts(chopped)- ½ cup
Seedless Dates( chopped)- 2 cups
Pumpkin seeds-1/2 cup
Figs Chopped- 1cup
Cashews- ½ cup
Cardamom-1tsp


Method
  • Roast all the nuts and pumpkin seeds till it turns to light brown color and set aside till it gets cooled. Blender those nuts once or twice (don’t make it powder).
  • Use quality dates that will make your laddu tastier, Mix all fresh seedless dates and figs as well.
  • Add the nuts mixture into dates, figs and finally add cardamom and mix it equally.
  • Take the mixture and make balls and enjoy with your Diwali with family.
